
According to Lauren McCabe Herpich’s, of Local Food Adventures, Mussels in White Wine isn’t a dish that you should only enjoy while at a fancy French restaurant! With the just perfect selection of mussels, a nice white wine to simmer and sip, and crusty bread, you can have an impressive meal in less than 15 minutes.
Serves 4
Ingredients
- 4 lbs. fresh mussels
- 1 tbs. extra virgin olive oil
- 4 large shallots, finely chopped
- 4 large cloves of garlic, finely chopped
- 2 cups of white wine, preferably a pinot grigio or sauvignon blanc
- 1/3 cup of mixed dried herbs (parsley and basil mix), chopped
- 6 tbs. butter, cut into pieces
- 1 crusty baguette (… maybe 2!)
Directions
- Rinse and scrub mussels under cold water, remove any residue and shell sediment
- In a large stockpot, heat olive oil, shallot, garlic, and white wine and bring to a simmer
- Add mussels, cover, and increase heat to high
- Once mussel shells are open, stir in herbs and butter
- Remove from heat
- Enjoy with a crusty baguette
