Garbanzo Ceviche


3 cups cooked garbanzo beans
1 red bell pepper
2 tomatoes
1 cucumber
1 serrano pepper (optional)
1 small bunch cilantro
1/4 red onion
Juice of 2 limes
Salt, pepper and paprika to taste


  1. Chop the bell pepper, tomatoes and cucumber. Finely chop the serrano pepper (optional) and cilantro. Slice or finely dice the red onion.
  2. Mix the garbanzo beans with the prepared bell pepper, tomatoes, cucumber, serrano pepper, onion and cilantro. Stir in the lime juice.
  3. Add salt, pepper, and paprika to taste.
